Chilled Cantaloupe Soup with d'Anjou Pear Chili Relish

Yield: 4 portions

Ingredients:
1 large ripe cantaloupe, peeled, seeded and roughly chopped
4 ounces water
1 ounce midori melon liqueur
½ teaspoon ground white pepper
1 ripe d'Anjou pear, peeled, cored and diced small
1 teaspoon poblano pepper, seeded and minced
2 sprigs cilantro leaves, chopped
1 Tablespoon red bell pepper, minced

Method:

  1. Soup: In a blender, add cantaloupe, water, midori and pepper. Puree until smooth and silky. Chill in the refrigerator
  2. Relish: In a mixing bowl, mix pears, cilantro, poblano and bell peppers together. Place 2 Tablespoons of relish in the center of chilled soup bowls. Surround with soup and garnish with cilantro sprig.
