Ingredients:
Crab Salad:
1 pound fresh Dungeness crab meat
1 Tablespoon chives, chopped
Juice of 1 lemon
¼ teaspoon ground white pepper
Tomato Salad:
2 large ripe tomatoes, cored and diced large
1 cucumber, peeled, seeded and diced large
½ red onion, peeled and sliced thin
1 Tablespoon dill, chopped
¼ ground white pepper
1 ounce red wine vinegar
Method:
- Crab Salad: In a mixing bowl, mix crab meat, chives, lemon juice and pepper.
- Tomato Salad: In a separate mixing bowl, mix tomato, cucumber, onions, dill, pepper and vinegar. Stir until well mixed.
- To Plate: Make a bed with the tomato salad and top with crab salad. Garnish with chives and enjoy.
