Ingredients:
Chicken:
2 pounds skinless, boneless chicken breasts
1-½ teaspoons The Body Gourmet™ Carrot Pineapple Passion Healthy Spice Blend
Papaya Coulis:
1 large ripe Hawaiian papaya
½ minced fine red jalapeno
¼ bunch chopped cilantro
2 ounces lime juice
1 ounce cold water
Carbohydrates:
1 bunch trimmed whole scallions
1 head radicchio (cut 1/8-inch pieces, leave root)
cracked black pepper to taste
4 ounces boiled potatoes of choice
Method:
The key to tender chicken: Certain fruits and vegetables have special enzymes which act as a natural meat tenderizer. Papaya is one of the best examples. Marinating this chicken in just the seeds and skins of the papaya for one hour will break down most of the tough connective tissue to ensure tender soft delicate flavors. Cut the papaya by removing the skin first and then deseeding them. Marinate the chicken and put the papaya center meat to the side. In a blender, puree papaya center meat, lime juice and water until smooth. Pour into a bowl and add cilantro, japaleno, salt and pepper. Season chicken breasts with The Body Gourmet™ Carrot Pineapple Passion Healthy Spice Blend. Grill tender chicken, radicchio and scallions until fully cooked. Serve with papaya coulis and boiled potatoes.
