2 medium tomatoes
2 Tbsp fresh salsa [or 4 Tbsp hot sauce]
3 Tbsp (3 ounces) cooked shrimp*
Slice off very top of tomatoes.
Scoop out tomato core & seeds, leaving most of the meat.
Scoop salsa into bowl.
Add cooked shrimp & mix together.
Stuff one-half of shrimp mixture into each of the tomatoes.
NOTE: If using hot sauce in the recipe, stuff tomatoes with shrimp and top with hot sauce.
*Can substitute shrimp with Albacore tuna
