1 medium-large bell pepper (orange, yellow or red)
3 ounce package of Albacore tuna (packed in water)
1/2 cup canned diced tomatoes
1 Tbsp low-fat mayonnaise
10 low-fat croutons
2 Tbsp snipped fresh chives
Cut the pepper in half length-wise, removing membranes and seeds.
In a bowl, mix together tuna, mayonnaise, diced tomatoes until blended.
Stuff each pepper half with the tuna mixture.
Top each pepper with 5 croutons.
Garnish each pepper with the snipped chives.
